Celery makes a great snack, especially if it’s stuffed with something great.  The ribs make great receptacles for lots of goodies.  I love celery stuffed with peanut butter, celery stuffed with string cheese, celery stuffed with cream cheese, celery stuffed with chicken salad or tuna salad, and celery stuffed with pimento cheese.

Here’s something that’s fast and yummy:

one  8 oz. package cream cheese at room temperature (I like to use Neufchatel; it has less fat and all the great taste of regular cream cheese, much tastier than no fat cream cheese)

10 green olives stuffed with pimento, chopped

2 Tbsp. finely minced sweet onion

Several stalks of celery

Combine all the ingredients, making sure it’s thoroughly mixed.  It will be a spread consistency, not a dip consistency.  Spread the mixture on clean sections of celery.  This makes a beautiful tray of appetizers.
