Shrimp Creole

2 lbs. fresh or frozen raw shrimp, peeled and deveined
3 Tbsp. olive oil
1 Tbsp. minced garlic
1 large can diced tomatoes with green chiles
1 large green pepper, cut into bite sized pieces
1sweet onion, cut into bite sized pieces
4 large ribs of celery, sliced into bite sized pieces
red pepper flakes to taste
hot sauce to taste
salt and pepper to taste
Rice or pasta of your choice (optional)
Peel and devein the shrimp and rinse thoroughly. Drain the shrimp and pat dry with paper towels. In a large chef’s pan, stir fry the shrimp and garlic in the olive oil until the shrimp are pink. This only takes a few minutes, so be very careful not to overcook the shrimp or they will be tough and chewy. Remove the shrimp from the pan and set aside to be added back later. In the pan, add the can of tomatoes and all the vegetables and spices. I like mine very spicy, so I use quite a bit of red pepper flakes and hot sauce. Just add a little and taste. Keep adding the spices until the sauce satisfies your taste. Cover and simmer the sauce for about fifteen to twenty minutes or until the vegetables are just crisp tender. Add the shrimp back into the mixture and just heat through, only a couple of minutes. Again, be sure not to overcook the shrimp! You can serve this over rice or pasta and add a salad for a complete meal.
