Budget Friendly Recipe: Salmon Cakes

I remember my Grandfather making these when I was little, and I enjoyed them so much. I think I will make these tonight for Supper.
INGREDIENTS
- 2 (7 ounce) can salmon, drained, deboned, and flaked
- 1 egg, beaten
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cup finely crushed saltine cracker crumbs (or you can subsitute with 1/2 c. self rising flour)
- Salt and pepper to taste ( or you can use Old Bay Seasoning if you have it)
Directions:
Preheat oven to 375 degrees. Spray cookie sheet well with cooking spray. Mix all the ingredients together and shape into patties. Place on well sprayed cookie sheet, and bake for 20 minutes turning once.
(Note: You can fry these also, which is what my Grandfather use to do, but you will save calories if you bake them.)

Yum. That’s basically what we had for supper last night. Except my kids don’t like it with onions. And I use matza meal instead of flour. I fry them. For kids, I want maximum flavor.

That’s the good thing about recipes, you can usually adjust them to your own family’s personal taste! When my kids were at home, there were a lot of recipes that I had to leave chopped onions out of,and used onion powder instead. And yes, fried salmon cakes are wonderful!
What do you usually serve as a side dish with salmon cakes? We are going “old school” tonight with our salmon cakes. We are having cornbread, navy beans, and french fries.

I was just telling Jim this weekend that I hadn’t made salmon cakes in a long time, and I should make them soon. I make mine with the chopped onion and only egg as a binder. They actually hold together quite well with no flour or crackers or anything, but my mom used the crackers just as you suggested when she used to make them when I was growing up. Sometimes, if I have it, I’ll add some parmesan cheese to the mix. I use a nonstick skillet and Pam spray on the pan or sometimes just for the flavor and health of it, a light olive oil coating on the pan. They don’t stick and are almost as crunchy as they would be if fried.
