Healthy Chicken Chili

2 pounds ground chicken
1 large sweet onion, diced
1 large green pepper, chopped
2 Tbsp. olive oil
2 Tbsp. Mexican style chili powder
2 Tbsp. minced garlic
2 cans Del Monte chili style diced tomatoes
2 cans kidney beans (optional)
Brown chicken in olive oil with onions, green pepper, garlic, and spices. Add tomatoes. Simmer for at least an hour. Add the kidney beans if you like beans and want extra fiber in your chili.
