2 deep dish pie shells
2 pounds bulk sausage..spicy or mild
8 oz shredded sharp cheddar cheese
2 small cans sliced mushrooms
1/2 can evaporated milk
7 large eggs,beaten
salt
pepper

While cooking sausage..make sure you keep it broken up much like you
would if you were cooking hamburger for spaghetti sauce. Brown
well,and drain. Place half the sausage into each pie shell. Drain
canned mushrooms,and place one can over the sausage in each pie shell.
Sprinkle half the cheese over the mushrooms in each pie shell. Blend
1/2 can evaporated milk into the beaten eggs..add enough salt and
pepper to suit your own taste. Pour half of egg mixture over all the
ingredients in each pie shell. Gently shake pie shells to make sure
the egg mixture evenly covers the other ingredients. Place pie shells
on cookie sheets,and cook at 350 degrees for about 30 minutes or
until mixture is “set”.

We also like to have this for supper with a salad and french bread.
If we have any left over ..its breakfast the next morning. It taste
just as good reheated.

You can use meat variations with this recipe thats equally pleasing
to your to your taste buds. Instead of sausage;you can subsitute with:
ham
hamburger
shrimp
crab meat
chicken

You can even subsitute the mushrooms depending on what meat you are
planning to use. Some ideas:
brocolli
sliced black olives
