Chicken Olive Salad
1 cup boneless, skinless cooked chicken, chopped
1/4 c. sliced green or black olives
1/4 c. walnut pieces
1/4 c. diced celery
2 Tbsp. mayonnaise with olive oil (reduced fat; 1/2 the calories of regular mayo)
Mix ingredients together and serve over a bed of lettuce or baby spinach leaves. This recipe is full of healthy Monounsaturated Fatty Acids!
